Meet Michael and Oscar Bonacini

Chef Michael Bonacini

Co-founder of Oliver & Bonacini Hospitality, is a leading figure in Canada’s culinary landscape. Growing up in his family’s hotel in Tenby, South Wales, he developed an early and enduring passion for hospitality. After training under Chef Anton Mosimann in London, he immigrated to Canada in 1985 and, partnering with Peter Oliver in 1993, was instrumental in defining regional Canadian cuisine through acclaimed restaurants such as Canoe. A recipient of the Ontario Hostelry Institute’s Gold Award, Bonacini has appeared on numerous TV shows, authored a cookbook, and served as a judge on MasterChef Canada.

Chef Oscar Bonacini

Chef Oscar Bonacini, also a prominent figure in the culinary world, began his career at 14 before refining his craft in Europe. After studying Hospitailty Business Management, he honed his skills under chef Mark Hix in England, working at renowned establishments like St. JOHN and Holborn Dining Room. Returning to Canada in 2019, Oscar joined Oliver & Bonacini’s Maison Selby and now collaborates with restaurateur Chris White at Restaurant 20 Victoria, which earned a Michelin Star and the Michelin Guide Toronto’s Service Award in 2023. Oscar is currently the assistant general manager at Canoe Restaurant in Toronto which celebrated its 30th anniversary in 2025.
